Coconut Soba Noodles with Ginger Broccoli

Soba noodles swim in a silky coconut broth spiked with ginger and garlic, then tossed with tender broccoli. Lime juice and cilantro brighten what could easily become heavy, keeping this noodle bowl fresh and craveable.

Ingredients

4 servings

  • 11 (9.5 ounces) package soba noodles
  • 12 teaspoons coconut oil
  • 11 teaspoon freshly grated ginger
  • 11 garlic clove, minced
  • 12 cups broccoli florets
  • 11 teaspoon salt
  • 11 (15-ounce) can light coconut milk
  • 12 tablespoons lime juice
  • 11 tablespoon chopped cilantro

Instructions

  1. 1. Cook the soba noodles according to the package directions. Drain, rinse with cold water, and set aside.

  2. 2. Heat the oil in a small pot over medium heat. Add the garlic and ginger and cook for 1 minute.

  3. 3. Add the broccoli florets, salt and coconut milk, bring to a boil, reduce to medium and cook for 5 minutes.

  4. 4. Add the noodles to the coconut milk mixture and toss to thoroughly coat.

  5. 5. Sprinkle with the lime juice and cilantro and serve.
