Reduce fresh apple cider with brown sugar and butter into a glossy, caramel-dark syrup that tastes like autumn in a jar. A hit of cider vinegar keeps it from cloying. Drizzle over pancakes, roasted squash, or vanilla ice cream.

Ingredients

  • 12 cups unfiltered apple cider
  • 13/4 cup packed light brown sugar
  • 13 tablespoons unsalted butter
  • 12 teaspoons cider vinegar

Instructions

  1. Boil ingredients with 1/8 teaspoon salt in a small heavy saucepan until reduced to 1 cup, 25 to 30 minutes. Cool to warm.
