Broiled Lemon Thyme Pollock

Pollock gets a bright, briny treatment under the broiler: a lemon-thyme mayo spread with anchovy and shallot creates a crust that's tangy and umami-rich. Five minutes and you've got dinner that tastes intentional, not rushed.

Ingredients

  • 14 (6-to 7-ounces) pieces pollock fillet
  • 11/2 cup mayonnaise
  • 12 teaspoons grated lemon zest
  • 11 tablespoon fresh lemon juice
  • 11 tablespoon finely chopped shallot
  • 11 1/2 teaspoons anchovy paste
  • 12 teaspoons chopped thyme

Instructions

  1. Preheat broiler. Oil broiler pan.

  2. Put fish, skin side down, on broiler pan and sprinkle with 1/4 teaspoon each of salt and pepper (total).

  3. Whisk together remaining ingredients and spread evenly over top of fish. Broil 5 to 7 inches from heat until just cooked through, 6 to 8 minutes.
