A crowd-pleasing aperitif punch that balances bitter Aperol and dry vermouth with bright grapefruit juice and fresh thyme. Make it ahead, then top with sparkling rosé and club soda just before serving. Light, refreshing, and dangerously easy to drink.

Ingredients

4 servings

  • 16 sprigs thyme
  • 11 750-milliliter bottle Aperol
  • 11 750-milliliter bottle blanc or dry vermouth, preferably Dolin
  • 14 cups fresh pink grapefruit juice
  • 11 750-milliliter bottle dry sparkling rosé
  • 12 cups club soda

Instructions

  1. Combine thyme sprigs, Aperol, vermouth, and grapefruit juice in a punch bowl and chill 2–6 hours.

  2. Thirty minutes before serving, add ice cubes or ice ring, wine, and club soda.
