Deviled Ham and Pecan Tea Sandwiches

Tangy ham paste studded with toasted pecans and sharp gherkins, punched up with Dijon and a dash of Tabasco. Spread thick between white bread, crusts removed, cut into neat triangles. Classic tea sandwich that actually tastes like something.

Ingredients

  • 11/2 pound cooked ham, cut into 1-inch pieces
  • 11/2 medium onion, quartered
  • 13 large sweet gherkins
  • 11/2 cup pecans,toasted and cooled
  • 12 tablespoons Dijon mustard
  • 11 teaspoon Tabasco sauce
  • 11/4 cup mayonnaise
  • 116 slices firm white sandwich bread
  • 1Garnish: chopped parsley and pecans

Instructions

  1. Pulse all ingredients except bread in a food processor until finely chopped and combined well.

  2. Spread ham mixture (1/4 cup per sandwich) between slices of bread. Discard crusts, then cut sandwiches into triangles.
