Cucumber Dill Salad

Bright, tangy, and impossibly refreshing. Crisp cucumber ribbons meet pickled red onion and a punchy mustard-vinegar dressing spiked with honey. Fresh dill brings everything into focus. Serve this alongside grilled fish or chicken, or eat it straight from the bowl.

Ingredients

4 servings

  • 11/8 cup rice vinegar
  • 11 tablespoon whole grain Dijon mustard
  • 11 tablespoon honey
  • 1Sea salt Freshly ground pepper
  • 11/2 red onion, thinly sliced
  • 11 English cucumber, cut into lengthwise slices with a vegetable peeler
  • 11 tablespoon chopped dill

Instructions

  1. Add vinegar, Dijon mustard, honey, salt, and pepper to a jar with a lid and shake well to mix. Add onion; let pickle for 30 minutes.

  2. Stir together cucumber and dill in a bowl; drain excess water. Toss salad with dressing and onions just before serving.
