  • 16 tablespoons unsweetened coconut milk
  • 13 tablespoons fresh lime juice
  • 15 teaspoons fish sauce
  • 11 tablespoon finely grated shallot
  • 11 tablespoon light brown sugar
  • 11/4 cup vegetable oil

Instructions

  1. Whisk coconut milk, lime juice, fish sauce, shallot, and brown sugar in a small bowl until smooth. Gradually add oil, whisking constantly until emulsified.

  2. Dressing can be made 1 day ahead. Cover and chill.
