Bright, herbaceous chutney that's part condiment, part flavor bomb. Cilantro and mint get blitzed with lime, chile heat, and onion into a textured paste that wakes up everything from curries to grilled chicken. Make it once and you'll want it on everything.

Ingredients

  • 12 cups packed fresh cilantro sprigs
  • 11 cup packed fresh mint leaves
  • 11/2 cup chopped white onion
  • 11/3 cup water
  • 11 tablespoon fresh lime juice
  • 11 teaspoon chopped fresh small green chiles, such as serrano or Thai, including seeds, or to taste
  • 11 teaspoon sugar
  • 13/4 teaspoon salt
  • 1or to taste

Instructions

  1. Purée all ingredients in a blender, leaving some texture.
