Chicken Pesto Wraps

Whole wheat wraps stuffed with pesto-coated chicken, crisp vegetables, and fresh spinach. These come together in minutes for lunch that actually satisfies. The pesto does the heavy lifting on flavor while the raw peppers and carrots keep things bright.

Ingredients

4 servings

  • 11 cup cooked and cubed chicken
  • 14 tablespoons pesto
  • 14 whole wheat tortilla wraps
  • 11 cup fresh baby spinach leaves
  • 11 red bell pepper, sliced into thin sticks
  • 11 medium carrot
  • 1sliced into thin sticks

Instructions

  1. 1. In a small bowl toss chicken with pesto just to coat.

  2. 2. Place 1 tortilla on a flat surface in front of you. Place 1/4 of the spinach onto the center of a tortilla and top with 1/4 of the peppers and carrots.

  3. 3. Place 1/4 of the chicken on top of the vegetables.

  4. 4. Wrap up into a burrito and repeat with remaining tortillas and ingredients.
