Ingredients

  • 11/3 cup olive oil
  • 11 teaspoon finely grated lemon zest
  • 13 tablespoons fresh lemon juice
  • 1Kosher salt, freshly ground pepper
  • 11/2 cup chopped fresh parsley
  • 11/4 cup capers
  • 11/2 medium celery root (celeriac), peeled, thinly sliced on a mandoline
  • 15 celery stalks
  • 1thinly sliced into long ribbons on a mandoline

Instructions

  1. Whisk oil, lemon zest, and lemon juice in a large bowl; season with salt and pepper. Stir in parsley and capers.

  2. Add celery root and celery to dressing; toss to coat. Let sit 5 minutes before serving.
