Aperol and overproof rum cut through bright pineapple and lime in this crushingly good tropical drink. A homemade sugar syrup ties everything together, while crushed ice keeps it properly chilled. One sip and you're somewhere warm.

Ingredients

4 servings

  • 11/2 cup sugar
  • 11 oz. Aperol
  • 11 oz. overproof rum
  • 11 oz. pineapple juice
  • 11/2 oz. fresh lime juice
  • 11 pineapple leaf (optional
  • 1for garnish)

Instructions

  1. Combine sugar and 1/4 cup water in a jar, cover, and shake until sugar is dissolved.

  2. Combine Aperol, rum, pineapple juice, lime juice, and 1/4 oz. syrup in a cocktail shaker filled with ice. Cover and shake vigorously 30 seconds. Strain into a glass filled to the brim with crushed ice and garnish with a pineapple leaf, if desired.
