Creamy, comforting polenta comes together with just water, salt, and cornmeal. Stir it low and slow for thirty minutes until it transforms into a silky base for anything you want to top it with, from braised vegetables to roasted mushrooms.

Ingredients

  • 18 cups water
  • 12 teaspoons salt
  • 12 cups polenta (coarse cornmeal)

Instructions

  1. Combine 8 cups water and salt in heavy larger saucepan. Bring to a boil. Gradually add cornmeal, whisking until smooth. reduce heat to low. Cover and cook until polenta is thick and creamy, stirring frequently, about 30 minutes.
