Barbecue Chicken Meatballs

From the kitchen of Carly

Tangy barbecue sauce clings to tender ground chicken meatballs spiked with chili powder and paprika. Applesauce keeps them juicy while cornbread crumbs add subtle sweetness. Quick-cooking and endlessly useful, these work as appetizers, meal prep, or a simple weeknight dinner.

Ingredients

4 servings

  • 11 pound ground chicken
  • 12/3 cup corn-bread crumbs or bread crumbs
  • 11 egg
  • 11 teaspoon chili powder
  • 11 small onion, grated and drained
  • 11/2 teaspoon paprika (optional)
  • 11 teaspoon kosher salt
  • 12 tablespoons applesauce
  • 12 tablespoons olive oil
  • 1"1 cup barbecue sauce (we like Trader Joes)"

Instructions

  1. 1. Combine the first 8 ingredients. Form the mixture into 1-inch balls.

  2. 2. Place the oil in a wide frying pan. Add the meatballs and brown them on all sides until cooked through, 8 to 10 minutes.

  3. 3. Add the barbecue sauce. Cook until it reduces and sticks to the meatballs, about 1 minute. Serve.
