Avocado-Lime Sauce Vierge

Bright, chunky avocado sauce that's equal parts luxurious and punchy. Lime juice and fresh herbs keep it vibrant, while jalapeño adds welcome heat. Spoon this over grilled fish, roasted vegetables, or crusty bread without hesitation.

Ingredients

4 servings

  • 11/2 cup extra-virgin olive oil
  • 11/2 medium avocado, pitted, diced
  • 11 jalapeño, seeded, finely chopped
  • 11 garlic clove, finely chopped
  • 11 teaspoon finely chopped shallot
  • 12 limes, halved
  • 12 tablespoons chopped fresh basil
  • 1Fine sea salt and freshly ground black pepper
  • 11 tablespoon coarsely chopped fresh cilantro leaves

Instructions

  1. Combine oil, avocado, jalapeño, garlic, and shallot in a medium bowl. Squeeze limes into avocado mixture. Using a spoon, scrape pulp out of limes into mixture. Stir to combine. DO AHEAD: Sauce can be made 4 days ahead. Press a piece of plastic wrap directly onto surface of sauce. Cover and chill. Bring sauce to room temperature before continuing.

  2. Stir basil and cilantro into sauce just before serving. Season with salt and pepper.
