Avocado Egg-in-a-Hole

From the kitchen of Carly

Creamy avocado halves cradle a baked egg in this genius breakfast hybrid. The yolk stays jammy while the cheese melts into every crevice. Garlic powder adds savory depth. It's elegant enough for brunch yet simple enough for a Tuesday morning.

Ingredients

4 servings

  • 11 avocado
  • 11 egg, beaten
  • 1grated cheese
  • 1garlic powder
  • 1Salt and freshly ground black pepper

Instructions

  1. Cut the avocado in half and remove the pit. Place the halves face up on a muffin tin so they won't tip over.

  2. Pour the beaten egg into each hole (one egg fills two halves). Sprinkle with grated cheese, garlic powder, salt, and pepper.

  3. Bake at 375° F for 15 to 20 minutes or until desired egg hardness.
