Ingredients

- 124 dried apricots
- 11/4 cup toasted almonds
- 11 clove garlic, smashed
- 11 tablespoon fresh mint, chopped
- 13 tablespoons olive oil
- 11 tablespoon lemon juice
Instructions
Slice apricots on one side to form a pitalike pocket. Grind remaining ingredients in a small food processor until fine. Stuff each apricot with mixture and serve.
