Ingredients

4 servings

  • 124 dried apricots
  • 11/4 cup toasted almonds
  • 11 clove garlic, smashed
  • 11 tablespoon fresh mint, chopped
  • 13 tablespoons olive oil
  • 11 tablespoon lemon juice

Instructions

  1. Slice apricots on one side to form a pitalike pocket. Grind remaining ingredients in a small food processor until fine. Stuff each apricot with mixture and serve.
