What sells the Crunchwrap is engineering. A pleated tortilla skin that locks the build, a tostada in the middle that keeps the hot side and the cold side from meeting until your teeth get there, and a sear flat enough to read like a tabletop. Skip the tostada and it collapses. Pleat too loose and it blows out. The first bite has to land hot beef, melted nacho cheese, crisp tostada, cool sour cream, and a shredded crunch all at once. Ingredients

  • 4 tortillasLarge flour tortillas
  • 4 shellsTostada shells
  • 1 lbGround beef
  • 2 tbspTaco seasoning
  • 1/2 cupWater
  • 1/2 cupNacho cheese sauce
  • 1/2 cupSour cream
  • 1 cupIceberg lettuce, shredded
  • 1 tomatoRoma tomato, diced
  • 1/2 cupSharp cheddar, shredded
  • 2 tbspVegetable oil for the sear

Instructions

  1. Brown the ground beef in a skillet, breaking it apart. Drain. Add taco seasoning and water; simmer 4 minutes until thick.

  2. Warm the nacho cheese sauce.

  3. Lay one tortilla flat. In the center, layer beef, then cheese sauce, then a tostada shell, then sour cream, lettuce, tomato, and shredded cheddar.

  4. Fold the tortilla up over the filling in pleats, working around the circle. The center should land like a stop sign with no gap.

  5. Heat oil in a hot pan. Place the wrap seam-side down and weight it lightly with another pan or a flat lid.

  6. Cook 2 minutes per side until golden and crisp. Repeat with the remaining tortillas.

Substitutions
  • Ground beef to Black beans or seasoned lentils. Use 2 cups cooked; works for vegetarian.
  • Nacho cheese sauce to Queso fresco crumbles. Drier; add a teaspoon of olive oil for slip.
  • Sour cream to Plain Greek yogurt. Tangier; thinner. Cuts the richness.
